The credit crunch is biting and people are now looking to save cash for another day.

One of the places most people can make a saving is by foregoing buying an expensive lunch each day and instead creating their own packed lunch.

However, for a devout carnivore like me, even a homemade sandwich can be expensive if you like a well filled sandwich. Supermarket pre-packed meats offer very little meat for a whole lot of money at the premium end of the market.

At the bottom end, then you really don’t know what you are buying with all sorts of processing tricks going on, chopping and reforming and injecting all sorts of bulkers, preservatives and ‘flavour enhancers’.

But there is a better and much cheaper way. Read more

Before the days of refrigeration, it was necessary to use alternative methods of food preservation. That’s why we have a heritage of jams, chutneys, brining (e.g. bacon) and smoking.

Smoked foods have become an expensive delicacy today whereas they were a staple in the past. However, it is quite possible to smoke foods in a domestic situation and at a fraction of the costs of commercially smoked foods.

The secret lies in buying a smoker cabinet and precisely controlling the amount of smoke delivered. However, until recently this has been difficult to control to achieve consistent results.

Smoking food is a delicious, fat-free way to add delicious flavor to your meats, fish and vegetables. When it comes to food smoking, Bradley Smoker is an established, respected leader.

As an award-winning designer and manufacturer of meat and fish smokers since 1984, Bradley Smoker dominates the market through manufacturing the most durable, precise smokers available. Their high quality smokers use unique smoking “bisquettes” that burn at a controlled rate to produce consistently ‘clean’ smoke. To produce those bisquettes, the hardwood chippings are bound together using precise quantities, at controlled pressures and densities.

Bradley smoking bisquettes are rendered from the natural hardwoods, without paraffin or waxes. They are 100% natural, producing a flavorful, clean smoke. Tests held by the British Columbia Institute of Technology have demonstrated that Bradley smoking bisquettes produce smoke four times cleaner than smoke produced by identical chippings burnt in a burn box or grill.

Bradley Smokers are now available in the UK and are gaining great ground. The consistency of the product is such that Mark Hix (of Great British Menu and Hix Oyster and Chop House fame) uses a Bradley Smoker to meet his exacting restaurant quality standards.

Another great use of the Bradley Smoker is in the area of barbecuing … not the traditional slap a burger on the grill and char the ouside style of barbecuing, but instead the American style of slow barbecue. As the cabinet has a heating element, you can also combine smoking with long slow cooking of marinaded joints (typically pork) that will pull apart with a spoon.

If you have a barbecue or grill that house a smoke drawer to burn chippings such as the Weber S450 or Weber S650, you can hot smoke, but the Bradley is considerably more precise when smoking is the priority.

Bradley Smokers are expensive, but then so is quality smoked food. I am very grateful that Mrs. Food with Passion treated me to a Bradley Smoker last Christmas. Since then we have enjoyed delicious smoked fish, shellfish, chickens etc..

If your partner is a foodie, then it would make for a great gift. It would also prove to be a great investment for any restaurant establishment to produce their own consistent smoked food.

Food with Passion loves the idea of being self-sufficient and knowing eggs-actly where your food has come from.

Unfortunately, until such times as we retired to a farm or small holding, it looked impossible, but for the last 2-3 years, Food with Passion has been self sufficient with our egg supply … in fact, we have been more than self-sufficient and have been in a position to give away eggs to friends and neighbours when we can’t use them fast enough. And the flavour is eggs-cellent (sorry for the pun!!). And for little effort on our part.  Read more

In the UK, we don’t always have guaranteed long hot summers. As a consequence it seems like we don’t invest heavily in barbecues and grills because we fear a washout. However, in some of the most extreme of climates, the “Grill” is used year-round and is bought built-to-last.

Buy the right barbecue and grill and you can use it as an extension to your kitchen and enjoy cooking with new techniques.

Many Chefs are snobbish when it comes to fish, ridiculing the idea that previously frozen fish can be as good as fresh.

In fact, in blind taste tests carried out in the Radio 4 Food studio in support of The Fish Society | Artisan Fishmonger, tasters were unable to discern any difference between the two when presented to eat.  Pru Leith also gives her endorsement to The Fish Society.  Read more

One of the biggest wedding expenses is providing wine at the Dinner table.

With many house wines starting at £15, and premium wines being considerable more expensive. it isn’t difficult for the wine bill to spiral out of control.

And if you wish a champagne toast, then you better budget £30 per bottle … maybe £10 per guest allowing for top ups. But you can do better than that … considerably better in fact.

A large glass of red wine contains about three...

Buy gourmet meat online with FREE delivery
Donald Russell is without doubt at the premium end of the gourmet meat, fish & game market and can be properly described as gourmet produce.

Donald Russell supplies kitchens all over the country, from London’s top Michelin-starred restaurants, to the domestic kitchens of  many appreciative customers.

Donald Russell’s built a reputation based upon supplying beef and lamb, but they sell a lot more online these days and based upon being able to provide the same high quality,  Donald Russell responded to the demand for the same level of quality in other meats.

Donald Russell’s range of premium meats now includes the finest free range pork and poultry, genuinely wild venison, game birds and seafood, and other gourmet specialities, hand-prepared by their own experienced chefs.

Steaks and joints are ready prepared and trimmed to restaurant specification and aged appropriately for maximum tenderness and flavour.

If you would like to try some of the more unusual cuts, like Ox Cheek or sweetbreads, then Donald Russell can also supply these. Similarly, often hard to find mutton is in their product catalogue. If you are looking for a reliable supplier of meats, fish & game, then Donald Russell should top your list of suppliers … everything is butchered, chined etc. perfectly ready for cooking.

I personally use Donald Russell for much of my meat supplies and especially for special occasions, such as a Christmas Goose or a Guinea Fowl Capon for Easter and I have never yet had cause to take advantage of the “Your money back if you’ve ever tasted better” guarantee.

Even if you aren’t ready to order from them, I heartily recommend signing up for their newsletter and catalogue. The catalogue is rewritten every month or two to take account of the changing seasons and with delicious recipes written by their own in house chef, will be some inspiration to the more cheffy amongst the readers.

All produce is shipped blast-frozen if required (some products may only be supplied frozen) in re-usable polystyrene containers with dry ice and arrives as fresh as it left the butchers.

Right now, Donald Russell has an end of Winter season sale as well as some Butchers Specials offering you Free Delivery if you follow the banner from here, but check Top Offer Codes before ordering in the future as there may be other periodic special offers or discount codes available.
